rpk shadow update - appends existing values for auto_create_shadow_topic_filters

Issue

When attempting to update a shadow links topic filters - auto_create_shadow_topic_filters via rpk shadow status update , previous values are appended after each update / save.

This is specific to "rpk shadow status update"  if the environment is helm/operator then updating topics via the methods detailed in the documentation https://docs.redpanda.com/current/manage/kubernetes/shadowing/k-shadow-linking/#update-a-shadow-link 
works fine.
 

Resolution 

The issue has been identified as a product defect (CORE-15616), when the fix is available in a release this document will be updated..
